Descubriendo la cerveza nómada gracias a Hop In The Box

Otro mes, otra selección de cervezas artesanas llegada en tu hogar gracias a Hop in The Box. Este més vamos a hablar de cerveza nómada (gitana).

¿Que es una cerveza nómada?

Como tuvimos ocasión de contar anteriormente en uno de nuestros articulos, una cervecería gitana o cerveceros gitanos no tienen equipo e instalaciones propias. Operan de forma temporal o itinerante, alquilando las instalaciones de otras cervecería, generalmente haciendo cervezas para ocasiones especiales y que no volverán a repetir su fabricación.

¿Por que una cerveza nómada?

El coste de la cerveza nómada, sobre todo, que es al mismo tiempo una de las ventajas y desventajas de este negocio.

El coste es una desventaja por que se pierde parte del margen ya que hay que pagar el sueldo de los dueños de la fabrica y esto tambièn es otro aspecto que hay que tener en cuenta. El hecho de trabajar en casa de otros ofrece, por un lado, la posibilidad de poder contar con el ayuda de los titulares de las instalaciones, y por el otro pero, no permite controlar el estado del producto. Obviamente, no es lo mismo hacer la cerveza como uno quiera, cuando quiera y como quiera.

El coste es una ventaja por que montar una cerveceria propria podría costar mucho. El equipo, por ejemplo, es uno de los factores relevantes y que, además desarolla un papel importante en el proceso de aprendizaje, ya que el uso de instalaciones de otras cerveceras permite conocer otros estilos y tecnicas distintas y sobre todo en la elección del equipo a la hora de montar tu propria cervecería, por el hecho de haber trabajado con maquinaria diferentes.

Y luego hay otros muchos más, algunos también argumentan que una vez que uno abre una cervecería, nunca consigue crear más y se pasa la mayor parte del tiempo preocupandose de todo lo que está relacionado con la cerveceria menos la cerveza.

Al fin y al cabo, se trata de hacer cerveza nómada, no de hacer cuentas.

La marca de referencia de España, el grupo Mahou Saint Miguel, está enteresandose mucho de cerveza artesanal y nomada, despues de mucho tiempo en que las grandes cerveceras eran puristas no querían oír hablar de un nuevo segmento de mercado que iba captando clientes más allá de las tradicionales cañas y tercios. Los consumidores de cerveza nómada capaz de pagar más por sus bebidas favorida experimentan con productos de sabores y aromas diversos.

No solo Mahou està enteresandose de cerveza nómada, ya ha comprado el 40% de la homónima marca Nómada.

Hop in The Box ha descubierto una gran cerveza. Diseñada y desarollada por Ronald de Waal, un holandés que vive en Finlandia, esta cerveza nómada se elabora en Bélgica y es considerata por muchos como una de las abanderadas del movimiento de la cerveza nómada artesanal en Europa.

Esta asombrosa mezcla de culturas da como resultado cervezas extremamente equilibradas, siempre con un toque de creatividad, tanto en el desarollo de recetas únicas de estilo tradicionales como en el diseño de las etiquetas en las botellas.

La selección presenta una American Amber Ale madurada en una cama de flores de Jamaica (hibisco), una White IPA con un acentuado sabor a lúpulo y dos ganadoras del World Beer Awards (WBA) 2016: More Complicated Than Your Girlfriend Stout (mejor Stout de Bélgica) y Tree Hugging Wood Chopping Mother Nature Loving IPA (Mejor IPA de Bélgica).

Algunas personas dicen que las cervezas se empiezan disfrutando por los ojos, y esta regla se confirma ciertamente en esta ocasión, cuando miras las fantasticas etiquetas también galardonadas en el WBA ‘16.

Seguramente una de las mejores caja de simpre, Hop In The Box nos ha encantado con esta selección de Julio.

Hop in the Box, el maridaje y el arte de acompañar

Después de haber probado las cervezas de Estonia y las de Estados Unidos que nos ha mandado Hop in the Box a lo largo de estos meses, ha llegado el momento de probar las cervezas alemanas “Freigeist Bierkultur“, que, aunque localizada en Colonia, puede considerarse una cervecería gitana.

¿Que es una cervecería gitana?

Una cervecería gitana o cerveceros gitanos no tienen equipo e instalaciones propias. Operan de forma temporal o itinerante, alquilando las instalaciones de otras cervecería.

Esto significa productos unicos ya que no volverán a repetir su fabricación, y esto es el mismo concepto de Hop in the Box.

En las ocasiones precedentes ya hemos utilizado las cerveza para crear recetas, este mes pero hemos decidido de acompañar las cervezas con platos de gastronomía.

Aunque las investigaciones realizadas apuntan una serie de conclusiones coherentes y hasta con cierta “lógica” gastronómica, no existen explicaciones científicas ni razonamientos exactos en el encuentro de los maridajes de la cerveza y la gastronomía. Es verdad que algunas combinaciones entre comidas y bebidas funcionan mejor que otras pero, al fin y al cabo, todo es cuestión de gustos.

La primera es una Session IPA elaborada en colaboración con la cervecería Pizza Port Brewing en California. En boca encontramos sabores dulces, afrutados y herbales que se combinan dejando una deliciosa sensación de cuerpo ligero. El regusto es amargo, afrutado y levemente carbonatado, invitando un segundo sorbo rápido. Una cerveza que marida perfectamente con un plato oriental, los nathan road noodles, fideos udon con mermelada de chiles, cebolla roja, puerro, gambas o pollo y hierbas frescas. El sabor fuerte de la cerveza se combina muy bien con el pescado fresco y picante de los noodles.

La segunda es una Wheat Beer elaborada con la pimienta blanca Kampot de Camboya. En la boca, una agradable y suave sensación gracias a la levadura y a una malta dulce y delicada. El regusto es limpio con un final agradable y especiado. Excelente opción para disfrutar con un pretzel.

El pimiento es muy reconocible, y bastante raro, pero con el toque de sal del maridaje parece que no necesita un contrasto dulce, y que los dos sabores se mezclan en una manera especial. Toda las cervezas de este mes estan a tope, per sin ninguna duda esta fue nuestra favorida.

La tercera es un IPA, elaborada con mandarinas, naranjas de sangre, limas y limones. Miss Florida se caracteriza por su color naranja ámbar brumoso, con una delgada cabeza blanca. La amargura y una sutil nota agria también están presentes en el sorbo. Una frescura increíble, medio carbonada y cuerpo medio, deja un acabado maravillosamente seco. En esta ocasión, decidimos acompañarla con una pizza con mozzarella, tomate passata, parmesano, queso de cabra, cebolla caramelizada y pesto. La tipica comida para llevar con ingredienties ricos y de cualidad; l’encuentro de sabores citricos de la cerveza y sabrosos de la pizza. Muy recomendable.

Y por último pero no menos importante, una Imperial Stout de inspiración alemana. El chocolate, las ciruelas y el café se mezclan con sutiles aromas tostados y de vanilla. De cuerpo medio a alto, esta cerveza deja una rica y cremosa sensación en la boca, donde el sorbo empieza dulce y termina un poco seco y de cacao amargo por esto la combinamos con un tiramisù. Esto fue el toque magico, un maridaje 100% dulce, sin contrastar los sabores, ponendole mas fuerza.

Try to imagine a dinner with a great chef from a very special tavern in Madrid Retiro, a unique menu, an impressive location and a lovely blonde girl serving your favourite beer every time you sip the last drop.

It’s a true story that San Miguel made happen last week, organizing a dinner inside the Museo del Ferrocarril, discovering why the Selecta is the greatest beer.

I drank lots of different beers in my life, from several countries, but I do believe that you don’t need to be a beer specialist to understand and taste the difference of the San Miguel ingredients compared to all the other beers on the market.

And after that which was already an incredible once in a lifetime experience I also had the chance to meet David with a tiny group of friends on the occasion of a degustation of San Miguel Selecta in a very characteristic bar of Las Letras, called Kaixo.

I discovered that San Miguel comes from Manila, Philippines, which is a city I love and I have been to 4 times. It really surprised me.

And I learn a lot during these two events, because the only way to learn is to explore, to be in the front row enjoying the experience with all the senses.

Johann, who was our storyteller at the Exploratorium dinner, all his talk along the dinner was focused on the tastes (sweetness, sourness, bitterness, saltiness, umami or savoriness) and how Chef José Luis Martínez from Taberna y Media has developed the menu of the dinner in order to match the Selecta tastes with his premium quality food.

After a talk with Chef José Luis Martínez  I understood why San Miguel has chosen him. First of all for his passion, it really seems to me that I was full of joy when talking about the preparation of his creations, second because he’s an explorer so that this melting’ pot of different countries, tastes, ingredients and culture was crucial point of the dinner, mixing and matching top quality food with the exclusivity of San Miguel Selecta.

I mean it is not just a matter of matching food with beer, all the courses were cooked or marinated with San Miguel Selecta.

And you know you is a great fan of the beer foam for cooking?

Ferran Adria, one of the most famous chef in the world, a revolutionary man for the cuisine and restaurant world s widely credited with starting the trend of foam on food, always preferring beer or sparkling wines to the still once.

First Course

Fattened hen chicken pickled with foie and ras el hanout.

Roasted scallops with confit artichokes from Tudela.

Second Course

Roasted beef cheek and venezuelan cocoa.

Dessert

Chocolate mousse with gianduia.

With David few days after all the attention was on San Miguel Selecta, the history of San Miguel, the development of Selecta, taking into consideration all the ingredients with a five senses approach, from the hearing to the taste, analysing the smell of hops and of more complex tastes like chocolate, galleta and cinnamon.

We admired the color of the beer with the sight, and did a three tasting phases analysis on how different they were one between each other.

It was a blast. Stop thinking about everything else and just turn on the focus on what we were drinking and the sensations that we felt.

You can only reach excellence with knowledge and what’s better than exploring for accumulating more and more knowledge. This is the spirit and the vision of the Exploratorium project that we had the chance to live twice, first with the “mesa nomada” inside the Museo del Ferrocarril and than with the cata viajera at Kaixo in Las Letras.

There are lots of “mesas nomadas” you can participate, unfortunately not in Madrid, but that’s that’s an explorer challenge, to move forward.

Risotto is my dish. It’s my favourite and the one I like to cook to my loved once.

I can change the recipe everytime and add new ingredients, but the final results will be as good as the previous and as the following.

Risotto it’s not a complex recipe, but it’s something you need to take care for the whole cooking journey.

As all the recipe everything starts with the ingredients, fish or meat, vegetables …

Usually if we consider those ingredients as the toppings or the flavour, there are 6 basic ingredients that could never miss:

  • Rice arborio
  • Soffritto with scallion (it is much better than onion and Carlo Cracco the Italian master Michelin chef wrote a book about it)
  • Olive oil
  • Butter
  • Broth
  • Wine.

This is the first time take the wine out of my risotto for experimenting a bit.

I decided to try the  Tanker Sauna Session from the last delivery of Hop in The Box, the craft beer club we wrote about in this article.

I choose the lightest beer, because I wanted to cook fish, but I think it might be awesome also to try the darkest beer with some meat or sausage for example.

The March box from Hop in The Box, that I decided to call “Hop(e) in The Box” because every month you’re waiting for something special, was about Estonian beer.

I have a serious problem with quantities, I know that this is really unprofessional but for the rice, cooking for example for two, I always see the level of the rice bag and that’s eat.

I think the best way to find the right unit of measure is always to try, every time you change an ingredients it might require more parmesan cheese at the end or more time to cook.

Just try it, always, many times.

For the beer it was easy I used it all, one bottle for two people, but you can put more or less, depends on the tastes.

This recipe has three main ingredients: prawns, zucchini and beer. This are the three main flavours you will perceive eating this risotto recipe.

Let’s start from the beginning!

You need two pans and one pot. In the pot you have the broth and in the first pan the risotto cooking and in the second the prawns.

Cut the scallion for the two pans, you’ll need two different soffritto, add a portion of oil and a portion of butter. When the scallion is becoming brown you put the zucchini in rice pot and the prawns in the other one. When the zucchini are getting cooked, after 10 minutes add the rice.

After 5 minutes you start with the bottle of beer in both pans, half for the prawns and half for the rice.

When the rice has absorbed all the beer you start adding the broth, but not all together, the risotto is cooking slowly, mixing it constantly.

Every time you see the broth completely absorbed you can add more until you taste the rice is cooked.

In the meantime the prawns are slowly cooking, I like to add Italian tomato concentrate (Mutti) that gives a special taste to the cooking water that just before the end of the risotto cooking will be added in the risotto pan.

And that’s eat, when rice is almost ready do this trick with the prawns water that will add a more fish flavour to the rice and start cleaning the prawns.

Love at first sip with Hop in the Box

“It was a dark and stormy night. Suddenly, a shot rang out! A door slammed.” Actually, It was a friday night, Friday 17th March 2017, considered by many as one of the unluckiest days of the year, but not by me because I received my Hop in the Box with a selection of estonian craft beers. It was also Saint Patrick’s Day, so what a better time to receive a box of beers?

What is Hop in the Box and what does this have to do with estonian craft beer?

Hop in the Box is a craft beer club that sends a monthly selection of awesome beers to its members. March was dedicated to Tanker, a refreshingly different estonian craft beer produced in small village 20 km outside Tallinn.

When I was leaving in Milan I had my craft beer trusted pub, which was one of my favourite place to hang out with friends, but here in Madrid I still haven’t found a similar place. Generally speaking my ideal craft beer consumption should be at home, but I don’t have a trusted shop and I know it’s not the same with supermarket beers.

So thanks to Hop in the Box I had the chance to know more about the story of these guys who like to break the rules of tradition and experiment with different raw materials, sourcing the freshest ingredients from farmers to create new and interesting flavors, since they started they have produced more than 60 different beers.

I was really impressed by the labels of the beers, they are all well designed with different graphics but as a writer I know that you should never judge a book buy the cover, so the same rule is for beers and labels.

Now, since the most important step in experiencing craft beer is tasting it, let taste it!

8 bottles, 4 tastes, all completely different. I enjoyed pairing the beer with my home cooking, or just tasting a refreshing pale ale from the fridge without a tapa.

Sweet or Bitter? Crispy or Fruit? Blonde or Dark? Sometimes, it is all a matter of taste, isn’t it?

I want to focus on my favourite, it was like meeting the love of your life and you know you can stay together just for two days, until the next love at first sip, probably in the next Hop in the Box, from now on Hop(e) in the Box. If you are curious my very favourite between the 4 tastes was “Taiskuu”, a white IPA beer, 6,5 % ABV, thanks to the Belgian Esters and fruity sweet aroma that you can immediately notice.

My own 5 reasons why I think Hop in the Box is a good (the greatest) idea:

  1. Travel the world by tasting different beers from the comfort of home
  2. They will rang your door, it’s like Christmas but every month
  3. The excitement of a surprise box, which is priceless
  4. They spread the craft beer culture helping local producers to be distributed
  5. Being the coolest beers bottles collectors between friends.
